Mornings are hard. You work so hard to get your kids out the door on time, it can be easy to forget about your own lunch! Then you find yourself heading to the cafe for an overpriced sandwich, or to the nearest fast food drive through for a cheap but unhealthy lunch. Here are a few easy ideas you can make on the weekend, grab out of the fridge or freezer on your way out the door, and save your health, sanity, and bank account! 1. Salad in a mason jar: Put the dressing on the bottom. Add whatever veggies, proteins or grains you like, and fill it to the top with lettuce. At lunchtime just shake it up and enjoy! 2. Pasta salad: Boil up a big batch of pasta, add whatever veggies and proteins you already have in the fridge, and use some Italian or ranch dressing for an easy pasta salad that will stay fresh all week! 3. Fried rice: Another great recipe for using up some leftovers! Toss any veggies and meat you have in the fridge in with some leftover rice, add a couple of eggs and some soy sauce and enjoy! 4. Smoothie: Who says smoothies are just for breakfast? They can also make a great, easy and healthy lunch on the go. You can even make a big batch and freeze them. Grab it out of the freezer, put it in your lunch bag, and it will be defrosted and ready to drink by lunch! Be sure to add lots of filling ingredients (think peanut butter, Greek yogurt or protein powder) so it keeps you full until dinner. 5. Freeze a single serving of leftovers: When you have a single serving of dinner leftover, don't throw it out, or leave it in the back of the fridge to turn into a science experiment! Wrap it in foil and put it in the freezer so it will be easy to grab and go (most food will be good for up to 3 months). |
